Typically this post would have gone up yesterday, HOWEVER with the breaking news of the new president elect, I felt WE ALL needed a day to let that settle and rest.
My food item of the week is this taco salad. This is my go to meal when it’s been along day and I don’t feel like slaving over the stove for hours. It takes no longer than 10 minutes to prepare from start to finish. Ingredients listed below.
Ingredients:
- Beyond Beef (original)
- Low sodium tortilla chips or scoops
- Tomatoes
- Lettuce (I usually use spinach)
- Taco sauce
Cook the Beyond Beef according to the instructions and combine all ingredients the way you see fit. Also, feel free to add whatever vegetables you like. Make it your own. It’s so tasty! You barely notice that it’s not actual beef.
