I made dairy-free potatoes yesterday for the first time. The turned out pretty well.
– 4 large potatoes
– 1.5 cups of original soy milk
– 4 tablespoons of vegan butter
I skinned, cut, and boiled the potatoes for 15 minutes. After 15 minutes, I poured out the water. In a separate saucepan I warmed the milk and melted the vegan butter. Once the butter was melted I poured it into the pan of cooked potatoes and started mashing. Once I reached the desired consistency, I added salt, pepper, and parsley to taste. Feel free to make them smoother or chunkier depending on your preference.
